Ingredients

  • 1 (15oz) can sweet corn, drained
  • 1 (15oz) can cream corn
  • 1 medium onion, chopped
  • 2 cloves of garlic, crushed
  • 4 medium potatoes, peeled and cubed
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 2 cups chicken stock
  • 2 cups water
  • 4 tbs corn starch mixed with ½ cup half and half or whole milk
  • Salt and pepper to taste
  • (optional: cooked and crumbled bacon, shredded cheese and/or chopped green onion for garnishing finished soup)

Instructions

  1. Add first 9 ingredients to slow cooker
  2. In a small separate bowl, combine half and half with cornstarch then mix into slow cooker
  3. Cook on low for 5-6 hours or high for 3-4 hours
  4. Serve with optional toppings
