Ham and White Bean Soup
This is a really classic combination, and its a great way to use up extra ham if you have some in the fridge.
Ingredients
- 1 tb olive oil
- 1 C Cubed Ham
- 1 onion chopped
- 2 garlic cloves crushed
- 1 yellow bell pepper, cored and diced
- 1 red bell pepper, cored and diced
- 1 carrot diced
- 2 (15oz) white beans, drained
- 2 cups chicken stock
- 2 cups water
- Salt and pepper to taste
Instructions
- 1. Heat the oil in a skillet and add diced ham, cook until edges are of ham are slightly browned and crispy (about 2-5 mins)
- 2. Add in onion and garlic and sauté until onions are softened
- 3. Transfer this mixture into your slow cooker and add in remaining ingredients
- 4. Add salt and pepper to taste
- 5. Cook on low for 4-5 hours or high for 2-3 hours
