Ham and White Bean Soup

This is a really classic combination, and its a great way to use up extra ham if you have some in the fridge.

Ingredients

  • 1 tb olive oil
  • 1 C Cubed Ham
  • 1 onion chopped
  • 2 garlic cloves crushed
  • 1 yellow bell pepper, cored and diced
  • 1 red bell pepper, cored and diced
  • 1 carrot diced
  • 2 (15oz) white beans, drained
  • 2 cups chicken stock
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. 1. Heat the oil in a skillet and add diced ham, cook until edges are of ham are slightly browned and crispy (about 2-5 mins)
  2. 2. Add in onion and garlic and sauté until onions are softened
  3. 3. Transfer this mixture into your slow cooker and add in remaining ingredients
  4. 4. Add salt and pepper to taste
  5. 5. Cook on low for 4-5 hours or high for 2-3 hours
