Denver Omelet Breakfast Casserole

This delicious cheesy play on a Denver omelet is the perfect hearty breakfast for those busy mornings.

Ingredients

  • 1/2 loaf or 11 slices of bread cut into chunks (old stale bread is the best)
  • 5 eggs
  • 2 cups milk
  • 1 cup Cheddar Cheese, shreaded
  • 1 cup cubed ham, cooked
  • 1 Sweet Pepper, chopped
  • 1/2 Onion, chopped
  • 1 cup Mushrooms, chopped
  • 1 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Chop and saute vegetables together until soft
  2. Spray pan with cooking spray
  3. cut bread into bite size chunks and add to pan
  4. Mix together eggs, milk, salt, pepper
  5. pour over bread
  6. Add vegetables and ham chunks
  7. mix to coat.
  8. Top with cheese.
  9. TO FREEZE: Cover (uncooked) with plastic wrap and freeze
  10. TO COOK: add to 350 degree oven for 30-35 minutes or until solid in the center.
