Denver Omelet Breakfast Casserole
This delicious cheesy play on a Denver omelet is the perfect hearty breakfast for those busy mornings.
Ingredients
- 1/2 loaf or 11 slices of bread cut into chunks (old stale bread is the best)
- 5 eggs
- 2 cups milk
- 1 cup Cheddar Cheese, shreaded
- 1 cup cubed ham, cooked
- 1 Sweet Pepper, chopped
- 1/2 Onion, chopped
- 1 cup Mushrooms, chopped
- 1 tsp salt
- 1/8 tsp pepper
Instructions
- Chop and saute vegetables together until soft
- Spray pan with cooking spray
- cut bread into bite size chunks and add to pan
- Mix together eggs, milk, salt, pepper
- pour over bread
- Add vegetables and ham chunks
- mix to coat.
- Top with cheese.
- TO FREEZE: Cover (uncooked) with plastic wrap and freeze
- TO COOK: add to 350 degree oven for 30-35 minutes or until solid in the center.
